1/4 cup plus 2 tablespoons canola oil
1/2 cup firmly packed brown sugar
1 teaspoon vanilla
3/4 cup white whole wheat flour
1/2 teaspoon baking soda
1 1/2 cups oats
1/2 cup chocolate chips
Whisk together oil and sugar, then beat in egg and vanilla. Mix in flour, then oats and chocolate chips. Bake at 350F for 10-12 minutes.
